Commonly found growing wild along theedges of fields and roadsides, I always find
the striking blue flowers of Chicory to make such
a wonderful contrast to the now dried yellow
grasses and weeds that it grows amongst.
This perennial herb has many uses most notably
its leaves in salads and its tap root
as a caffeine free coffee substitute.
